Anti-Inflammatory Orange Scented Carrot Soup

An anti-inflammatory and immune boosting soup perfect to get you through the school year and cold/flu season. Contains turmeric, ginger, carrots, apples and orange juice. This soup is Paleo, follows the SCD and is vegan.

Ingredients

  • 1 lb carrots, washed and chopped
  • 2 apples, peeled, cored and chopped
  • 1/2 orange
  • 1/2 tsp turmeric
  • 1 tsp grated ginger
  • 3 cups liquid of your choosing (water, chicken broth or vegetable broth)
  • 1/8 tsp pepper

Instructions

  • Steam carrots over high heat for 10 minutes.
  • Peel, core and chop the apples. Add to carrots and continue steaming for 10 more minutes or until fork tender. 
  • Transfer carrots and apples into the blender along with the juice of half an orange, turmeric, grated ginger, pepper and 3 cups of liquid. Blend until smooth.
  • Add more liquid if you desire a thinner soup. Can be served hot or cold. Store covered in refrigerator.
