Anti-Inflammatory Orange Scented Carrot Soup
An anti-inflammatory and immune boosting soup perfect to get you through the school year and cold/flu season. Contains turmeric, ginger, carrots, apples and orange juice. This soup is Paleo, follows the SCD and is vegan.

Servings 5 cups
- 1 lb carrots, washed and chopped
- 2 apples, peeled, cored and chopped
- 1/2 orange
- 1/2 tsp turmeric
- 1 tsp grated ginger
- 3 cups liquid of your choosing (water, chicken broth or vegetable broth)
- 1/8 tsp pepper
Steam carrots over high heat for 10 minutes.
Peel, core and chop the apples. Add to carrots and continue steaming for 10 more minutes or until fork tender.
Transfer carrots and apples into the blender along with the juice of half an orange, turmeric, grated ginger, pepper and 3 cups of liquid. Blend until smooth.
Add more liquid if you desire a thinner soup. Can be served hot or cold. Store covered in refrigerator.
