Hi friend! Not too far from my home there’s a strawberry farm called Parkesdale Farms and they are AMAZING!
They have a wonderful produce stand where they sell plants, bushes, fruits, and veggies. However, the thing that they’re best known for is their strawberry shortcake and strawberry milkshakes!
One of my favorite childhood memories was going to the farm to get milkshakes after church on Sunday’s. It’s these memories that inspired me to recreate this treat into a healthy strawberry smoothie recipe!
How to make a dairy free strawberry shortcake smoothie
This easy strawberry smoothie recipe is just FIVE simple ingredients!
- strawberries, frozen
- banana, frozen
- canned coconut milk
- vanilla extract
Blend all ingredients together until smooth and creamy. Add a cup of ice to the blender if using fresh strawberries and bananas.
Top the smoothie with coconut whipped cream for more of a milkshake feel!

Strawberry Shortcake Recipe
- 1 cup canned coconut milk, shaken
- 1 tsp vanilla extract
- 2 Tbsp honey
- 12 medium frozen strawberries
- 1 small frozen banana
- Blend all ingredients until smooth and creamy. Adjust sweetness as needed.
- Pour into a glass and enjoy!
- For an ice cream or smoothie bowl consistency, decrease the coconut milk to 1/2 cup.
- If using fresh fruit instead of frozen, add a cup of ice to the blender.
