One of the foods I miss most while on my SCD journey is mashed potatoes. To me it is such a comfort food and while smashed cauliflower is good, I was never able to make it with the same richness and texture of potatoes. After a lot of trial and error I’ve come up with a simple smashed cauliflower recipe that satisfies my need for comforting mashed potatoes!
When you steam the cauliflower you want to make sure to remove it from the heat once it’s just tender enough to be pierced with a fork. If you let it steam too much your smashed cauliflower is going to be more of a soup! To cook my cauliflower I put a lid on my colander and placed the colander over a pot of boiling water. Make sure the water in the pot is not touching the cauliflower. Once the cauliflower is cooked, transfer to a blender, add your cheese and blend until smooth. So simple!
