This coconut flour mug cake is moist, fluffy, and has a subtle vanilla flavor. It's a single serve dessert that takes just two minutes to bake in the microwave and is great for satisfying a sweet tooth quickly! This healthy treat is SCD and Paleo friendly! It's gluten free, grain free, dairy free, and refined sugar free.
Hi friends! I've always had a huge sweet tooth, so giving up traditional desserts when I started on the SCD diet a few years ago was very difficult!
Even now I have a tendency to eat too many "healthy" sweets and baked goods, which is why I love the idea of a mug cake.
It satisfies my need for a sweet treat and I don't have extra hanging around the house tempting me!

how do you make a coconut flour mug cake?
In a mug mix the coconut flour and baking soda together. Use a small bowl to whisk the egg, honey, vanilla extract, coconut oil, and coconut milk. Then pour the wet ingredients into the mug and stir well.
It takes coconut flour a bit of time to absorb moisture so allow the batter to sit for about one minute before whisking again.
Pop the mug into the center of the microwave for two minutes. The cake is done when it's a golden brown color and the sides have pulled away from the mug a bit. A toothpick inserted into the center of the cake should come out clean.
Allow the cake to rest for a few minutes before digging in! Hope you enjoy!
Coconut Flour Mug Cake tips:
- Before beginning it's extremely important that ALL the ingredients are at room temperature or you'll end up with a lumpy batter.
- I use full fat canned coconut milk
for this recipe but any dairy free milk will work.
- For even baking, pick a mug that has straight sides.

I have all the ingredients for this!!! Though, hoping I can use low-fat coconut milk instead because that's what I'm stocked up on at home, lol.
Thanks!
Jennifer
