I’ve always had a huge sweet tooth, so giving up sweets when I started on this new dietary lifestyle a few years ago was very difficult! Even now I have a tendency to eat too many “healthy” sweets and baked goods. That’s why I love the idea of a mug cake. It satisfies my need for a sweet treat and I don’t have extra hanging around the house tempting me!

This vanilla mug cake has a very mild flavor and is incredibly moist considering it’s made with coconut flour. I make this cake with coconut milk, although any kind of milk will do. Before beginning it’s extremely important that all your ingredients are at room temperature, if not, when you go to mix the hot melted coconut oil with any cold ingredients you’ll end up with a lumpy batter.
Once you’ve mixed all your ingredients, add the batter to a standard coffee mug and pop it into the microwave. In my microwave it takes exactly 2 minutes for the cake to bake. I would suggest starting to check on your cake at 1 minute 45 seconds. You’re looking for the top to be a light golden brown color and for the sides of the cake to have pulled away from the mug.
You can eat this mug cake plain as it is or top with your choice of fresh fruits, jams, chocolate chips, nuts etc. It’s a versatile little cake!
A vanilla cake made with coconut flour and sweetened with honey. This mug cake takes 2 minutes to bake in a microwave.
- 2 Tbsp coconut flour
- 1/2 tsp baking soda
- 1 large egg
- 2 Tbsp coconut milk
- 2 Tbsp melted coconut oil
- 2 Tbsp honey
- 1 tsp vanilla extract
Combine the coconut flour and baking soda in mug.
In a small bowl mix egg, coconut milk, coconut oil, honey and vanilla.
Add the wet ingredients to mug and stir well. Allow to sit for 1 minute (this allows the coconut flour to absorb some of the liquid) before stirring again.
Place mug in the center of the microwave and cook for 2 minutes.
Add your choice of toppings and enjoy!
Make sure all ingredients are at room temperature before beginning.
Since each microwave is a bit different you may want to start checking if it's done at 1 minute 45 seconds. You're looking for the top to be a golden brown and the sides of the cake to have pulled away from the mug.
Warning! The mug may be very hot when taking out of the microwave!
