Hi friends! This is a fast, easy recipe that’s great for a little snack or to add to your weekend brunch menu. Now, these little pancakes don’t have the fluff or rise of traditional pancakes, so I hesitate to even call them that. If you’re looking for a fluffy pancake recipe…this isn’t it! These are fairly thin but they have a nice flavor and are wonderful for using up any brown bananas you might have on your kitchen counter. I actually used this recipe to introduce eggs to my little boy. He LOVES these pancakes! On their own they won’t fill you up, so I suggest having them as either a snack or making sure you serve them alongside some other breakfast staples such as eggs, oatmeal, etc.

Ok, on to the recipe! Make sure to choose a banana that has brown spots, it will make for a sweeter pancake. Take your banana and mash it really well. Stir in a beaten egg, your cinnamon and vanilla . If you’re following the Whole 30, omit the vanilla extract. You’re going to pour your batter onto your greased non-stick pan or griddle. We got a griddle as a wedding gift years ago and it’s amazing! I use it multiple times a week and it comes in super handy when cooking for a family!
Here’s the important part…your pancakes shouldn’t be any bigger than the size of a silver dollar! Any bigger and they will be too difficult to flip. They should only take 2 to 3 minutes to cook on each side and will be lightly browned when done. I typically enjoy mine with a little drizzle of honey but maple syrup (if you’re not following SCD) would of course be perfect for these little guys as well! Hope you enjoy!
Using only four ingredients, these little pancakes have the delicious flavor of banana, cinnamon and vanilla. These are free of grains, gluten, refined sugar and dairy. They are SCD legal and Paleo.
- 1 ripe banana
- 1 egg
- 1/2 tsp ground cinnamon
- 1/8 tsp vanilla extract (optional)
Over medium heat, melt a little butter or coconut oil in non-stick pan or griddle.
Mash banana really well. Stir in egg, vanilla and cinnamon.
Pour batter onto pan or skillet, ensure your pancakes are no bigger than the size of a silver dollar.
after 2 to 3 minutes carefully flip over pancakes and cook for another 2 to 3 minutes. They should be lightly browned.
Remove from heat and serve with your choice of honey, syrup, jam etc.
These can be very fragile, take care when flipping.
Aim to make these the size of a silver dollar. Any bigger and they will be difficult to flip.
Should make 10 to 12 silver dollar sized pancakes.
Omit the vanilla extract to make them compliant for Whole 30.
